- 2 3/4 cups all-purpose flour
- 1/2 tsp. baking soda
- 1 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. salt
- 1/2 cup vegetable shortening
- 1/4 cup light-brown sugar
- 3/4 cup molasses
- 1 egg, beaten
- 1 tsp. hot water
- 1 tsp. vinegar
- Raisins, nuts or cinnamon candies
- for decorating (optional)
Preheat oven to 350°F. Grease cookie sheets and dust lightly with flour.
Combine all ingredients in a large mixing bowl and blend well. Shape dough into a ball, wrap tightly in plastic wrap and refrigerate for at least 2 hours, or up to 24 hours.
On a lightly floured surface, roll out dough to 1/4″ thickness, and cut into gingerbread men. Arrange on baking sheets 1 1/2″ apart, and bake until risen and no longer shiny, about 10 minutes. Remove from heat and allow cookies to cool. If desired, decorate with raisins, nuts or cinnamon candies. Store gingerbread men cookies in an airtight container.
