Shortbread Cookie Recipe from our Top 10 Favorite Holiday Cookies article.
INGREDIENTS:
- 2 cups all-purpose flour
- 2/3 cup sugar
- 1 tsp. kosher salt
- 1 cup unsalted butter, chilled and cut
- into 1″ chunks
DIRECTIONS:
Heat the oven to 325°F. In a food processor, pulse together the flour, sugar and salt. Add the butter and pulse to fine crumbs. Continue pulsing until the crumbs start to stick together, but don’t over-process. Press the dough into an ungreased 8″- or 9″-square baking pan or a 9″ pie pan. Prick the dough all over with a fork. Bake until golden-brown, 35 to 40 minutes for a 9″ pan, or 45 to 50 minutes for an 8″ pan. Transfer to a wire rack to cool. Cut into squares, bars or wedges while still warm.
